Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
Place the salmon fillets on the prepared baking sheet, skin side down, and brush the fillets generously with the lemon herb mixture.
Arrange the lemon slices on top of the salmon fillets.
In a separate area on the baking sheet, place the cherry tomatoes and asparagus. Drizzle with a bit more olive oil and season with salt and pepper.
Bake in the preheated oven for about 12-15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
Once done, remove from the oven and let it rest for a minute. Garnish with fresh parsley before serving.
Notes
For best results, use fresh herbs and serve immediately.
