Cook the spaghetti or rice noodles according to the package instructions. Drain and rinse under cold water to stop the cooking process, then set aside.
In a large skillet or wok, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes; sauté for about 2 minutes, or until the garlic is fragrant and just starting to turn golden.
Pour the soy sauce, maple syrup, and sesame oil into the skillet. Stir well to combine the flavors, cooking for an additional 1-2 minutes.
Add the cooked noodles to the skillet, gently tossing to coat in the garlic sauce. Cook for 2-3 minutes until heated through.
Remove from heat and stir in the chopped green onions and sesame seeds. Serve the noodles in bowls, garnished with fresh cilantro and lime wedges on the side.
