dried Italian herbs (oregano, thyme, basil)

feta cheese, crumbled

Instructions
Preheat your oven to 400°F (200°C).
In a large oven-safe skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften and release their juices.
Stir in the baby spinach and cook until wilted, about 2 minutes. Season with dried Italian herbs, salt, and pepper.
Create space in the skillet by pushing the veggies to the side and place the salmon fillets, skin-side down, in the pan.
Squeeze lemon juice over the salmon and sprinkle lemon zest on top. Top each fillet with crumbled feta cheese.
Transfer the skillet to the preheated oven and bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
Remove from the oven and let it sit for a minute. Garnish with fresh basil leaves before serving.
Notes
Serve with fresh basil for added flavor.
