In an oven-proof skillet or baking dish, add the cherry tomatoes and minced garlic. Drizzle with olive oil, and sprinkle with salt, pepper, and red pepper flakes. Stir to combine.
Place the feta cheese in the center of the tomatoes. Drizzle a little more olive oil over the feta and season with a pinch of salt and pepper.
Bake in the preheated oven for about 25-30 minutes, or until the tomatoes are blistering and the feta is soft and slightly golden.
While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and set aside.
Once the feta and tomatoes are done, remove the dish from the oven and carefully stir the ingredients together to create a creamy sauce from the melted feta.
Add the cooked pasta to the skillet and mix until the pasta is well coated with the sauce. Stir in the lemon juice and lemon zest for an extra zing.
Taste and adjust seasoning if necessary. Serve hot and garnish with fresh basil leaves.
Notes
Feel free to adjust the seasoning and add more vegetables if desired.
