2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper to taste

8 small corn tortillas

½ cup fresh cilantro, chopped

1 avocado, sliced

Lime wedges for serving

Preheat your oven to 425°F (220°C).

    On a baking sheet, toss the diced sweet potatoes with olive oil, cumin, smoked paprika, chili powder, salt, and pepper until evenly coated.

      Spread the sweet potatoes into a single layer and roast them in the oven for about 20-25 minutes, or until they are fork-tender and slightly caramelized, stirring halfway through for even cooking.

        While the sweet potatoes are roasting, heat the black beans in a small saucepan over medium heat until warmed through, roughly 5 minutes. Season with a pinch of salt and pepper.

          In a separate pan, lightly warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

            Once the sweet potatoes are done, assemble the tacos by layering the roasted sweet potatoes and black beans on each tortilla.

              Top with fresh cilantro and sliced avocado for a creamy finish.
