4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1/4 cup cream cheese, softened

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1 teaspoon lemon juice

Toothpicks or kitchen twine for securing

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

      Add the chopped spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat and let cool slightly.

        In a mixing bowl, combine the cooked spinach and garlic, feta cheese, cream cheese, oregano, lemon juice, salt, and pepper. Mix well until everything is combined.

          Take each chicken breast and place it on a cutting board. Using a sharp knife, carefully create a pocket in each chicken breast by slicing it horizontally, being careful not to cut all the way through.

            Stuff each chicken breast generously with the spinach and feta mixture. Secure the opening with toothpicks or tie with kitchen twine to keep the filling inside.

              Season the outside of the chicken breasts with salt, pepper, and a drizzle of olive oil.

                Place the stuffed chicken breasts in a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

                  Remove from the oven and let rest for 5 minutes before removing toothpicks or twine.
