Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt; set aside.
In a large bowl, cream the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 2-3 minutes.
Add the lemon zest, lemon juice, egg, and vanilla extract to the creamed mixture; beat until well combined.
Gradually add the dry ingredient mixture to the wet ingredients, stirring just until combined. Be careful not to overmix.
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are just set but the centers are still soft.
Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, dust the cookies with powdered sugar for a sweet finishing touch.
