2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

1 large onion, finely chopped

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 can (14 oz) crushed tomatoes

1 can (13.5 oz) coconut milk

3 tablespoons tomato paste

2 tablespoons garam masala

1 tablespoon ground cumin

1 tablespoon ground coriander

1 teaspoon turmeric powder

1 teaspoon paprika

1 teaspoon cayenne pepper (optional for heat)

Salt and black pepper to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Cooked basmati rice or naan for serving

Instructions
 

In a large bowl, combine the chicken pieces with garam masala, cumin, coriander, turmeric, paprika, cayenne (if using), salt, and black pepper. Mix well to coat the chicken evenly with spices.

    In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

      Transfer the sautéed onion mixture to the slow cooker. Add the seasoned chicken, crushed tomatoes, coconut milk, and tomato paste to the slow cooker. Stir gently to combine everything well.

        Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
