Instructions
In a small bowl, mix together the grated Parmesan cheese, minced garlic, Italian herbs, red pepper flakes (if using), salt, and pepper.
Rub the chicken breasts with olive oil and then coat them evenly with the Parmesan mixture.
Place the coated chicken in the slow cooker and pour the chicken broth around the chicken.
Cover the slow cooker with the lid and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is fully cooked and tender.
Once cooked, carefully remove the chicken from the slow cooker and let it rest for a few minutes.
Optionally, you can thicken the sauce in the slow cooker by turning it on high and stirring in an additional tablespoon of Parmesan cheese for a creamy texture.
Serve the garlic Parmesan chicken garnished with fresh parsley, drizzled with the flavorful broth from the slow cooker.
Notes
For a creamier sauce, add an extra tablespoon of Parmesan cheese at the end.
