In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the sliced smoked sausage and sauté for about 5 minutes until browned.
Stir in the chopped onion, diced bell peppers, and minced garlic. Cook for another 4-5 minutes until the vegetables soften.
Add the cherry tomatoes, smoked paprika, oregano, salt, and pepper. Stir until well combined.
Pour in the vegetable or chicken broth, followed by the rice. Stir everything together.
Bring the mixture to a boil, then reduce heat to low and cover the pot. Simmer for about 20 minutes or until the rice is cooked and has absorbed most of the liquid.
Remove from heat and fold in the baby spinach until it wilts down.
Serve hot, garnished with fresh parsley on top.
