Preheat your oven to 375°F (190°C). Grease a 9-inch pie pan or baking dish with cooking spray or olive oil.
In a large skillet over medium heat, cook the ground beef or turkey with the diced onion until the meat is browned and the onion is translucent, about 5-7 minutes. Add the minced garlic and cook for an additional minute.
Sprinkle the taco seasoning over the meat mixture, then add the diced tomatoes, black beans, and corn. Stir well to combine and let cook for about 5 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
In a separate bowl, whisk together the eggs and milk until well combined. Stir in half of the shredded cheese.
Spread the meat mixture evenly in the bottom of the prepared pie pan. Pour the egg and cheese mixture over the top, making sure it covers the meat mixture evenly.
Sprinkle the remaining shredded cheese on top of the pie.
Bake in the preheated oven for 30-35 minutes or until the egg is set and the top is golden brown. A knife inserted in the center should come out clean.
Allow the pie to cool for a few minutes before slicing. Garnish with fresh cilantro or parsley before serving.
