1.5 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 medium onion, chopped

2 cloves garlic, minced

2 teaspoons ground cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

Juice of 2 limes

Fresh cilantro for garnish

Avocado slices for serving (optional)

Tortilla chips for serving (optional)

Instructions
 

Prep Chicken: Place the boneless chicken breasts at the bottom of the crockpot.

    Add Vegetables: Layer the chopped onion, minced garlic, black beans, corn, and diced tomatoes on top of the chicken.

      Season: Sprinkle the cumin, chili powder, smoked paprika, salt, and black pepper evenly over the mixture.

        Add Lime Juice: Squeeze the juice of two limes over the top of the ingredients in the crockpot.

          Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and easily shredded.

            Shred Chicken: Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken back into the crockpot and stir everything together until combined.

              Adjust Seasoning: Taste the mixture and adjust seasoning as necessary. If you prefer it spicier, feel free to add a pinch of cayenne pepper or extra chili powder.
