Instructions
Begin by placing the chicken breasts at the bottom of the crockpot.
In a mixing bowl, combine cherry tomatoes, red onion slices, Kalamata olives, minced garlic, oregano, thyme, salt, and pepper. Mix until well blended.
Evenly pour the vegetable mixture over the chicken in the crockpot.
In a small bowl, whisk together the lemon juice and olive oil. Drizzle this mixture evenly over the ingredients in the crockpot.
Cover the crockpot and set it on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is fully cooked and tender.
Once cooked, shred the chicken using two forks and mix it with the other ingredients in the pot for a well-combined dish.
Serve the Greek chicken warm, garnished with fresh parsley and crumbled feta cheese if desired.
Notes
Serve the chicken over a bed of fluffy quinoa or orzo for an authentic Greek meal experience. Add lemon wedges on the side for a zesty touch!
