Ingredients

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 cup vegetable broth

1 teaspoon dried oregano

1 teaspoon sugar

Salt and pepper to taste

1/2 cup heavy cream (or coconut cream for a vegan option)

1/4 cup fresh basil, chopped (plus extra for garnish)

1 tablespoon balsamic vinegar (optional)

Instructions

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

Add the minced garlic and sauté for an additional minute until fragrant.

Pour in the crushed tomatoes, vegetable broth, oregano, sugar, salt, and pepper. Stir well to combine.

Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 20 minutes, stirring occasionally.

Remove the pot from the heat and use an immersion blender to carefully blend the soup until it reaches a smooth consistency. You can also transfer it in batches to a traditional blender, but be cautious with the hot liquid.

Return the blended mixture to the pot and place it over low heat. Stir in the heavy cream and fresh basil, and heat just until warmed through. Adjust seasoning with additional salt and pepper as needed.

If desired, add a tablespoon of balsamic vinegar for a hint of sweetness and depth.

Once heated, remove from the stove. Serve the soup hot in bowls.

                  - Presentation Tips: Garnish each bowl with a swirl of cream and a sprinkle of fresh basil. Serve alongside crusty bread or a grilled cheese sandwich for a classic pairing.
