In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Add the minced garlic and stir for another minute until fragrant.
Season the steak pieces with salt, pepper, and paprika. Add them to the skillet and cook until browned, about 5-7 minutes, stirring occasionally.
Once the steak is browned, remove it from the skillet and set aside.
In the same skillet, add the cauliflower florets, stirring to mix well with the remaining juices. Cook for about 5 minutes until they start to soften.
Pour in the heavy cream, stirring to coat the cauliflower. Allow it to simmer for another 5 minutes until it thickens slightly.
Stir in the cheddar cheese and mix well until melted and creamy.
Return the steak bites to the skillet, gently folding them into the creamy cauliflower mixture. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
Adjust seasoning, adding more salt and pepper if needed.
Garnish with freshly chopped parsley before serving.
