In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.
In the same skillet, add the diced potatoes and sprinkle with garlic powder, onion powder, salt, and pepper. Cook for about 10-12 minutes, stirring occasionally, until potatoes start to become tender and golden.
Stir in the broccoli florets and cook for an additional 5 minutes until they are tender.
Reduce the heat to low and return the sausage to the skillet. Pour in the heavy cream and sprinkle the ranch dressing mix over the top. Stir well to combine all ingredients.
Allow the mixture to simmer gently for another 5-7 minutes, stirring occasionally, until everything is heated through and the sauce has thickened slightly.
Taste and adjust seasoning with additional salt and pepper if needed before serving.

Serve the skillet directly from the pan, garnished with freshly chopped parsley for a pop of color!
