Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the softened cream cheese and butter. Use an electric mixer to cream them together until smooth and fluffy.
Add the brown sugar and granulated sugar to the mixture, and beat until well combined.
Incorporate the egg and vanilla extract, mixing well until the batter is smooth.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
Fold in the chocolate chips and crushed graham crackers, ensuring they are evenly distributed throughout the dough.
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers still appear soft.
Remove from the oven and allow to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
Allow cookies to cool completely for the best texture.
