In a large skillet, heat the olive oil over medium heat. Add the diced onion and green bell pepper, sauté until softened, about 4-5 minutes.
Stir in the minced garlic, cooking for another 1-2 minutes until fragrant.
Increase the heat to medium-high and add the ground chicken. Cook, breaking it apart with a spatula, until it's no longer pink, approximately 6-8 minutes.
Sprinkle the Cajun seasoning, smoked paprika, Worcestershire sauce, and brown sugar over the chicken. Mix well to combine.
Pour in the diced tomatoes, and season with salt and pepper. Stir everything together, then reduce the heat and let simmer for 10 minutes, allowing the flavors to meld.
While the mixture simmers, toast the hamburger buns until golden brown.
Once the chicken mixture is done, spoon it generously over the toasted buns.
Garnish with sliced pickles and fresh parsley before serving.
