2 cups fresh strawberries, hulled and sliced

1 cup granulated sugar

3 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 pre-made pie crust (store-bought or homemade)

1 tablespoon butter (for dotting)

Whipped cream (for topping, optional)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, combine the sliced strawberries, half of the sugar (½ cup), cornstarch, lemon juice, and vanilla extract. Gently mix until the strawberries are well coated and the mixture is combined.

      Allow the mixture to sit for about 10 minutes to let the strawberries release some juices.

        Roll out the pie crust if using homemade dough and fit it into a 9-inch pie dish. Trim any excess crust hanging over the edges.

          Pour the strawberry filling into the pie crust, spreading it evenly. Dot the top with small pieces of butter for added richness.

            Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for an additional 30 minutes, or until the filling is bubbly and the crust is golden brown.

              Remove the pie from the oven and let it cool for at least 1 hour before serving to allow the filling to set.

                Serve slices of the pie topped with a dollop of whipped cream, if desired.
