2 ripe avocados

4 slices of whole-grain bread

4 large eggs

1 tablespoon white vinegar

1 lime, juiced

1/2 teaspoon garlic powder

1/4 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Olive oil for drizzling

Prepare the Toast: Toast the whole-grain bread slices until golden brown and crispy. Set aside.

    Make the Avocado Mash: In a bowl, scoop out the ripe avocados. Add lime juice, garlic powder, salt, and pepper. Using a fork, mash the avocados until creamy but still slightly chunky.

      Poach the Eggs: Fill a medium-sized pot with water and add the white vinegar. Bring to a gentle simmer over medium heat. Crack one egg into a small bowl, then slowly slide it into the water, keeping it close to the surface to minimize splashing. Repeat for the remaining eggs. Poach for 3-4 minutes until the whites are firm but the yolks remain liquid. Remove the eggs with a slotted spoon and drain on a paper towel.

        Assemble the Toast: Spread a generous amount of the avocado mash on each slice of toasted bread.

          Add the Eggs: Carefully place a poached egg on top of the avocado mash on each toast.

            Season and Drizzle: Sprinkle with crushed red pepper flakes (if using), and drizzle olive oil over the top. Season with additional salt and freshly cracked pepper to taste.

              Garnish: Finish off with chopped fresh cilantro or parsley to add a vibrant touch.
