2mediumapples, peeled, cored, and diced (preferably Granny Smith)
0.5cupchopped walnuts or pecans (optional)
1spraycooking spray or oil for the waffle iron
1cuppowdered sugar for glaze
2tablespoonsmilk for glaze
Instructions
Preheat your waffle iron according to the manufacturer's instructions and spray it lightly with cooking spray or brush with oil.
In a large mixing bowl, whisk together the flour, baking powder, cinnamon, and salt until well combined.
In another bowl, mix the applesauce, granulated sugar, eggs, milk, and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
Fold in the diced apples and chopped nuts (if using) gently into the batter.
Pour about 1/4 to 1/3 cup of batter onto the center of the waffle iron, close the lid, and cook until the waffles are golden brown and the iron indicates they are done, typically about 4-5 minutes.
Remove the waffle donut carefully and repeat the process with the remaining batter.
For the glaze, mix powdered sugar with milk in a small bowl until smooth. Adjust consistency to your liking by adding more sugar or milk as needed.
Drizzle the glaze over the warm waffle donuts or dip the tops into the glaze for a more decadent coating.
Notes
Serve warm with coffee or tea for a delightful treat.
